"Pediatric chiropractor" is not a separate license. In Texas, a chiropractor who sees children holds the same Doctor of Chiropractic license as one who only sees adults. What differs is training and focus: some chiropractors take additional coursework through the International Chiropractic Pediatric Association (ICPA), which offers a pediatric certification program, and build their practice around families, infants, and kids.
Chiropractic care for children is a lower-force version of adult care. Techniques are adapted to a child's size, and on infants the pressure used is very light. Whether chiropractic care is appropriate for a particular child, and for what, is a question for your pediatrician as well as the chiropractor.
